Dubajska čokolada je lani osvojila praktično ves svet: od Instagrama in TikToka do slaščičarn in prazničnih stojnic. Iz nje so nastale različice v obliki palačink, sladoleda, vroče čokolade in celo tortic, ki so polnile vitrine najbolj trendovskih kavarn.
Zdaj se sicer zdi, da se je manija nekoliko polegla … a morda je prav to pravi čas, da jo spet obudite. Na TikToku smo namreč našli pregrešno dober recept za dubajske čokoladne brownije s pistacijevim in kunafa nadevom, ki vas bodo spomnili, zakaj je dubajska čokolada postala tako popularna.
Tako bogati in razkošni so, da si boste prste oblizovali še dolgo zatem, ko pospravite celoten pladenj.
Sestavine:
Za plast iz browniejev:
- 180 g sladkorja
- 2 jajci
- 113 g nesoljenega masla
- 170 g nasekljane čokolade
- 80 g bele moke
- 3 žlice kakava
- ½ žličke soli
Za nadev iz kadaifa:
- 260 g kadaif testa (fino nasekljanega)
- 2 žlici nesoljenega masla
- 320 g pistacijeve kreme
Za čokoladno kremo:
- 120 g sladke smetane
- 100 g mlečne čokolade (nasekljane)
@noorbakesss Pt.4 | My fall bakery menu 🍂 Recipe below 👇🏼 Crumbl released their Dubai Chocolate Brownie, but why buy it when you can make an even better one at home? 🤎✨ Ingredients 🟤Brownie Base * 180g caster sugar * 2 eggs * 113g unsalted butter (for browning) * 170g chopped chocolate * 80g plain flour * 3 tbsp cocoa powder * ½ tsp salt 💚Kunafa Filling * 260g kunafa pastry (finely chopped) * 2 tbsp unsalted butter (for toasting kunafa) * 320g pistachio cream 🍫Chocolate Ganache * 120g double cream * 100g milk chocolate (chopped) Instructions 1. Preheat the oven to 170°C and line a baking pan with parchment paper. 2. Brown 113g of unsalted butter in a saucepan until golden, then set aside. 3. Melt the chopped chocolate in the microwave in short bursts until smooth, then stir in the browned butter and let cool slightly. 4. In a separate bowl, whisk the sugar and eggs until light and fluffy. 5. Add the chocolate butter mixture to the eggs and sugar, and whisk until fully combined. 6. Fold in the flour, cocoa powder, and salt until just incorporated. 7. Pour all of the brownie batter into the prepared pan, smooth the top, and bake for 22 minutes. Let cool completely in the pan. 8. In a pan over medium heat, melt 2 tbsp of butter. Add the finely chopped kunafa pastry and cook, stirring often, until golden and crisp. Let cool slightly. 9. Mix the toasted kunafa pastry with the pistachio cream until fully combined, then spread evenly over the cooled brownie. 10. Place the pan in the fridge for about 30 minutes to set. 11. For the ganache, place the double cream and chopped milk chocolate in a microwave-safe bowl. Heat in short bursts, stirring in between, until melted and glossy. 12. Pour the ganache over the pistachio-kunafa layer, spread evenly, and refrigerate, ideally overnight, or at least 1 hour before slicing. Priprava:
1. Pečico segrejte na 170 °C in pripravite pekač s peki papirjem.
2. Maslo segrevajte v ponvici, dokler ne postane zlato rjavo, nato ga odstavite.
3. Čokolado stopite v mikrovalovni pečici v kratkih intervalih. Primešajte rjavkasto maslo in pustite, da se malce ohladi.
4. Jajci in sladkor penasto stepite. Dodajte čokoladno zmes in dobro premešajte.
5. Vmešajte moko, kakav in sol – le toliko, da se sestavine povežejo.
6. Maso vlijte v pekač, poravnajte in pecite 22 minut. Ohladite v pekaču.
7. Medtem na srednjem ognju raztopite 2 žlici masla in v njem popražite nasekljano testo kadaif, dokler ne postane zlato in hrustljavo. Ohladite in vmešajte pistacijevo kremo.
8. Kadaif-pistacijev nadev razporedite po ohlajenem browniju. Pekač postavite v hladilnik za 30 minut.
9. Za kremo segrejte smetano z nasekljano čokolado v mikrovalovni pečici (v kratkih intervalih). Mešajte, dokler ne nastane sijoča zmes.
10. Prelijte čez nadev, poravnajte in znova postavite v hladilnik – najbolje čez noč, najmanj pa za eno uro.
11. Narežite in uživajte v bogati sladici.
